Couscous

This North-African staple food is delicious paired with chicken or roasted veggies, and it so easy to make. Perfect for camping. Couscous has 3.6g of protein for every 100 grams, and contains a 1% fat-to-calorie ratio.

Couscous Salad

Serves 4

INGREDIENTS

  • 12oz Water
  • 12oz Couscous
  • 2 Tbs. Butter
  • 1/8 tsp. Sea Salt
  • 2 Tbs. Olive oil
  • 1 clove Garlic
  • 1 medium tomatoes
  • 1 small Cucumber
  • 2/3 Cup caned Olives

METHOD

In saucepan bring water, butter and salt to a medium boil. Remove from heat and stir in couscous, let sit for 5-6 minutes. While you wait mince the garlic and dice the tomatoes and cucumbers.

With a large spoon fluff couscous and add garlic, tomatoes, cucumber and olives. Add olive oil and olive brine to taste. This salad goes great with Chicken or other fowl.
